Amazing Asparagus- Three Light Summer Recipes

Asparagus is one of my favorite fat burning foods- it’s delicious and incredibly nutritious. Asparagus is full of folate and potassium and the stalks are rich with cancer-fighting anti-oxidants. Low-calorie asparagus is perfect as a side dish, or on its own as a light summer lunch. Check out some easy asparagus recipes for summer:

Oven Roasted Asparagus Recipe

1 lb fresh organic asparagus
1 tbsp olive oil
Balsamic vinegar and salt to taste

1. Trim and wash asparagus
2. Prehead oven to 425 degrees.
3. Place asparagus in shallow casserole dish with olive oil and salt and roast for 12-15 minutes. Turn once midway through.
4. Remove from oven and serve hot with a sprinkle of balsamic vinegar,

Asparagus Light Recipe

1 lb asparagus
1 tsp olive oil
1 tsp fresh lemon juice

1. Boil water in a medium sized pot.
2. Rinse asparagus and trim ends.
3. Blanche asparagus for two minutes in boiling water and drain.
4. Add oil and lemon to asparagus and serve.

Asparagus with Sole Recipe

1 lb asparagus
1 lb sole fillets (4 pieces)
1 tbsp chives
1tsp mustard
4 tbsp lemon juice
salt to taste

1. Cut asparagus into 3 inch pieces. Boil in saucepan for 5 minutes and drain.
2. Season sole fillets with salt and lemon on skin side.
3. Plase asparagus spears at one end of each fillet and roll up fillet with asparagus spears inside. Secure with a toothpick.
4. Place fillets in a 2 quart casserole dish.
5. Combine remaining ingredients and pour over fillets.
6. Bake dish at 400 degrees for 15 minutes while basting fish every 5 minutes.
7. Serve hot.
