Roasted Broccoli + Quinoa Lettuce Cups

Many moms ask me for ideas for quick and simple meals to create for their family that are healthy and easy to make. When I find a food that is delicious and I’m happy to serve to my own family, I love to share it, and I recently discovered truRoots Roasted Garlic Quinoa and Brown Rice Blend, a delicious way to add more grains to family meals quickly; cooking time is 60 seconds in the microwave or a couple minutes in a skillet! We’ve had fun adding truRoots Quick Cook Roasted Garlic Quinoa and Brown Rice Blend to our tacos, over salads, in stuffed peppers, and much more, and the recipe I’m going to share with you today incorporates it into a side dish with veggies where it just really shines to make typical broccoli a little more fun and unique. Roasted Broccoli & Quinoa Lettuce Cups

Ingredients
1 package truRoots Quick Cook Grains Roasted Garlic Quinoa and Brown Rice Blend
2 cups broccoli (frozen works best)
2 tbs olive oil
lettuce cups (or romaine lettuce leaves), washed
chili powder

Directions
1. Preheat oven to 350º F. Lay out broccoli on a baking dish and drizzle with olive oil. Sprinkle on a small pinch of chili powder to taste, and bake at 350º F for ten minutes.
2. While broccoli bakes, cook TruRoots Quick Cook Grains Roasted Garlic Quinoa and Brown Rice Blend in a skillet as directed on package, until heated through (or microwave as directed).
3. Mix broccoli and TruRoots Quick Cook Grains Roasted Garlic Quinoa and Brown Rice Blend together in a bowl. Cut lettuce into small cups, and fill with broccoli and truRoots mix.

These are so tasty! Veggies and grains in a delightfully spicy way are definitely a new twist, and lately I find I love adding a little chili spice to many typical dishes I make, especially vegetables. Cheese lovers can top the filled lettuce cups with a little of their favorite shredded cheese, and of course a favorite sauce can be added on top. I personally just love extra virgin olive oil and sea salt (if anything), but this dish really doesn’t need anything extra. The quinoa and brown rice mixed together with roasted garlic is perfect already.
