Sweet Earth Foods Awesome Grounds is a raw plant-based protein that launched this fall, and can be found in the fresh meat section in select stores. It tastes like ground beef! I switched it out of our recipe and no one realized it was different. The grounds are made with non-GMO plant based ingredients such as pea and wheat protein, and the texture and overall appearance is that of ground beef, so I was able to add the protein, fiber, and great flavor of Sweet Earth Foods Awesome Grounds into our dinner without anyone realizing it. It can be cooked in the skillet, which is how we made it for our recipe today, and in general can simply be substituted into recipes calling for ground beef, such as lasagna, meatballs, enchiladas, etc.
We aren’t a vegetarian family, but the truth is I really don’t enjoy eating meat that much and have been moving toward more and more meatless meals, and for my family’s health, I try to serve a more plant-based diet for my family. I still enjoy dairy, but even that has been decreased over the last three years, so Sweet Earth products are helping me to transition to a diet I am happier with.

Ingredients
1 package Sweet Earth Awesome Grounds
1/2 cup pumpkin puree
1/2 cups marinara sauce
toppings of choice (ie shredded lettuce, diced tomatoes, regular or vegan cheeses and sour cream)


Directions
1. Cook Awesome Grounds in a skillet over medium heat until fully browned.
2. Add in pumpkin puree and marinara sauce and stir together an additional 3 minutes.
3. Remove skillet from heat, season to taste, and serve in taco shells topped with choice of toppings. Enjoy!
There is something very delicious about pumpkin in recipes, especially this time of year when the air is crisper and the leaves are changing colors. Pumpkin has a mild taste and adds a creamy richness to everything, and Awesome Grounds browned and mixed with pumpkin and marinara is utterly amazing! It’s also pretty darned healthy- lots of veggies and protein here! I hope your family enjoys this recipe as much as mine does.
