Favorite Recipes of 2015

Our kitchen was very busy this last year, and I found myself trying out new dishes I never made before as well as perfecting favorite old recipes. A sausage stuffing for Friendsgiving? Making all my wraps with lettuce for a healthier twist? Making one pot pasta dishes in less than ten minutes (including boiling)?

It was fun to learn some new culinary tricks, and it resulted in some of my favorite recipes ever. I’m sharing my favorite recipes of 2015 below, the recipes I cooked or baked this last year that I still make again and again and still love to share and recommend (and continue to perfect).

7 Lemon Butter Chicken and Grilled Lemon Chicken With Capers are two incredibly tasty and healthy dinner ideas for date night or family dinner, and if you’re noticing a trend, you are right- we love healthy food here for most meals, particularly low carb and most particularly grilled chicken!

8 Almond and Artichoke Hummus is the perfect side dish or appetizer for game night, and it’s meatless for all your vegetarian friends. This last year we tried a more plant-based diet (because we wanted a healthier diet for our family) and now have meatless Mondays, as well as meatless Wednesdays and Meatless Fridays.

9 No Boil Three Cheese Beefy Baked Penne is an easy weeknight meal that is another family favorite, and great when you are short on time but want to eat at home. Easy weeknight meals save the day around here often now that the boys are in after school activities.

10 Vegetable Pot Pie in the newest addition to my kitchen arsenal, and it’s so delicious and hearty and perfect for cold winter nights that I don’t know how I lived without making pot pies for so long. This is another meatless Monday option (for anytime you want a meatless meal).

11 Greek Chicken Salad Lettuce Wraps helped us achieve a lower carb diet this year, shedding those seriously hard to lose last 5 baby pounds that I wasn’t able to drop before… now all our wraps are lettuce wraps. I love Greek salad with grilled chicken, so adapting it to lettuce wraps was a natural transition for me.

12 One Pan Penne with Black Olives was our first attempt to make a one pot or a one pan pasta dish (and the cooking time of ten minutes includes the boiling of the pasta) and we are now converts to one pan pasta cooking- so easy to do, so fast, little clean up, and just as delicious!
