Creamy & Hearty Pumpkin Chili Slow Cooker Recipe

I recently had the most delicious chili. I mean delicious, hearty, yet light and creamy, and just yummy, yummy, yummy. No oil, no dairy, and gluten free yet it was so tasty and creamy. You are probably wondering how chili can be so creamy without oil and anything dairy…just add LIBBY’S 100% Pure Pumpkin!

I made my 5 ingredient pumpkin chili in my slow cooker, because during the summer I sometimes crave things that I usually make in a dutch oven or regular oven, but it’s so hot that I find myself whipping out my slow cooker more and more to not heat up the whole kitchen. This recipe only has five ingredients, is so easy to make and very tasty, so much so that my husband asked that I always make chili with pumpkin from now on.

Creamy & Hearty Slow Cooker Pumpkin Chili

Ingredients
1 lb ground beef
1 15 oz can LIBBY’S 100% Pure Pumpkin
1 15 oz can pinto beans (drained)
1/2 cup chicken broth
1/2 cup diced tomatoes

Directions

1. In a large 12-inch skillet, brown beef until no pink shows.
2. Add browned beef and remaining ingredients (except tomatoes) to slow cooker and cook on high for 2 1/2 hours.
3. Add in tomatoes and cover; cook addition 30 minutes in slow cooker.
