As a New Yorker born and raised in Queens, I’ve always been loyal to the New York Jets. I stick by my beloved football team through thick and thin, and wear their colors of green and white with pride. Whether or not they make it to the Super Bowl, I still support them, and I still love Game Day no matter who is playing. I love to have friends at our gameday parties (sometimes it’s just too cold to make it to too many games so we keep it indoors), because it’s just fun to cheer on whomever is playing, to have friends over, and to enjoy great nosh!
We like to set out a mini-buffet with mini-tapas and create-your-own foods, like taquitos and a “Make Your Own Nachos” bar, to let our guests have fun making their own gameday snacks. And of course, everything is decorated in green and white for my team!
Tailgating Queso Recipe
Ingredients
1 tablespoon butter
2 bell peppers, seeded and diced
1 shallot, diced
1 jalapeño, seeded and diced
1 tsp adobo
16 ounces sharp cheddar cheese, chopped into 1/2 inch cubes
Instructions
1. In a pot over medium heat, add butter, pepper, shallot, jalapeño, and adobo. Stir together until butter has melted and starts to simmer, then turn heat to low.
2. Add in cheddar cubes slowly, a few at a time, stirring while it melts. Keep stirring until all cheddar cheese has been added and melted together. Turn off heat and serve or keep warm until ready to serve.
