Slow Cooker Greek Chicken Chili Recipe

The weather has been up and down lately, so I’ve been creating dishes that are beloved regardless of the weather, like our family favorite, Greek Chicken Chili in the crock pot. Between school, work, and extracurricular activities, my slow cooker has set up shop on my kitchen counter for months now, and I love that thing. It saves me time, which I always feel short on around the holidays- I want to spend more time with my family ♥︎

Slow Cooker Greek Chicken Chili Recipe

Ingredients

2 lbs. boneless and skinless chicken breast
1 can (14 oz) giant white beans, drained
1 can (14 oz) Organic Diced Tomatoes
1/4 cup Greek olives (we used Agrinio olives), pitted and chopped
2 tbs extra virgin olive oil
1 tsp. oregano
1 tsp. crushed red pepper
sea salt to taste
1/2 cup feta cheese, crumbled

Directions

1. Brown chicken 3 minutes on each side on stovetop before cooking (this step is optional but I personally love the extra flavor and texture that comes from browning the chicken first).
2. Place chicken at bottom of slow cooker and add in beans, Hunt’s Organic Diced Tomatoes, olives, and olive oil in crockpot in layers. Season with oregano, pepper, and salt to taste and cook on low for 6-7 hours.
3. With a wooden spatula, shred chicken in slow cooker. It will be very tender and easy to tear with gentle pressure. Stir chili.
4. Spoon chili into bowls and top with crumbled feta cheese. Serve and enjoy!

This is one of my favorite slow cooker chicken recipes because it has the deliciousness of chicken breast in a chili (which I love way more than ground beef chili), plus the freshness of juicy, wholesome tomatoes and a Mediterranean twist from the olives and oregano. I add olive oil because I savor the flavor, and I’m always trying to increase the content of healthy fats in my mostly keto diet. If crushed red pepper is too hot for you, substitute regular pepper.

We buy organic diced tomatoes in BPA-free cans (to save my time so I don’t have to dice them myself, and to keep my family safe from cans with chemicals; tomatoes are acidic so should be in BPA free cans), and we always choose organic when it’s available. Greek chicken chili is amazingly tasty – isn’t everything with feta and olives tasty?- and I have a feeling your family will love it just as much as ours does.
