Better-For-You Kale + Beef Soft Tacos With Cauliflower Tortillas

Cauliflower-Powered Beef Soft Tacos


1 lb ground beef
3/4 cup favorite pasta sauce (ie marinara)
1/4 teaspon each of seasonings of choice (we love pepper, cumin, and coriander)
4 CAULIPOWER Cauliflower Tortillas
1/2 cup pido de gallo
1/2 cup chopped kale
1/2 cup shredded mixed cheeses


1. Brown ground beef in skillet for about five to seven minutes, then add in pasta sauce and stir together until well cooked.
2. Add in spices and stir together.
3. Toast CAULIPOWER Cauliflower Tortillas in microwave or in skillet as per directions on package (about 45 second over high heat in a skillet on each side).
4. Spoon about 2-3 tablespoons of ground beef into each cauliflower tortilla, then top with a spoon of pico de gallo, some shredded kale, and cheese.

Serve and enjoy!! These are delicious, and healthier for you too, packed with lots of veggies throughout. The tortillas are also vegan and dairy-free (though the rest of the recipe is not), and they are gluten, wheat, and preservative-free, and available both grain-free or original. If you love pizza with cauliflower crust (like I do- I can’t get enough of it!) you will absolutely love these too. I grew up loving tacos (not to mention everything else that can be wrapped in a tortilla- or even slicing them up to bake with some olive oil and sea salt!). Cauliflower Tortillas are way more delicious than any other tortillas I’ve tried, and a better-for-you alternative to tortillas, so why have any other?
