Summer Salad With BUSH’S Beans & Homemade Dressing

The weather has finally caught up to the season, and heading out every day is such a pleasure. I love the warmth and the sun, and I have a feeling this time the beautiful sun shiny weather is here to stay. That means more time outdoors, and more time eating fresh foods instead of hot stews. I get to break out my sandals and summer dresses, and I also can put away the slow cooker for a while and start enjoying my beloved summer salads. A crisp, fresh salad for lunch on a warm day is always a treat.

I love my veggies, and the best veggies are available in the summer. My perfect salad starts with chopped curly kale, and is topped with produce and toppings that are plentiful this time of year, like corn, avocado, and black beans. It’s a tasty and healthy salad, and I love to add a simple homemade dressing that is easy to whip up to make it perfect.

Summer Salad With Homemade Dressing

Ingredients

For salad

1 package (16 oz) kale
1 can (15 oz) BUSH’S® Black Beans
1 can (14 oz) sweet corn, drained
1 ripe avocado, chopped

For dressing

1 tsp Dijon mustard
1 tsp lemon juice
1 1/2 tablespoons mayonnaise
1/4 cup olive oil
salt and fresh pepper to taste

Directions

1. Wash and chop kale, and place in large bowl. Top with BUSH’S Black Beans, corn, and avocado. Stir together and set aside.
2. To make dressing, whisk mustard, lemon juice, and mayonnaise together in a bowl, then add in olive oil slowly while continuing to whisk. Finally, add in salt and pepper to taste and mix well.
3. Pour dressing over salad, serve and enjoy!

It’s time for outdoor fun now that the weather is starting to warm up, and it’s also time for me to work on my veggie garden. In the past I only grew scallions and lettuce, but this year I want to start growing peppers and May is a great month to do it. It will help me continue to enjoy homemade, organic summer salads for years to come, right from my own vegetable garden!
