Enjoying The Last Days Of Summer With Homemade Salted Caramel Mocha Ice Cream

Summer days are for fun in the sun, including badminton, days at the beach, volleyball, and anything involving shorts, sand, flip flops, and salt water. It’s the best time of year, and I feel like it always goes by way too fast! Luckily, it’s not over yet, and we are enjoying the wonderful sunshine and heat the way we are supposed to- outdoors, running around from one enjoyable activity to the next.

We cool off with iced tea for the kids, iced coffee for me, and ice cream for everyone! We’ve been making homemade ice cream lately with an ice cream maker, and because International Delight offers so many coffee creamer flavors to pick from, we have a veritable ice cream store in our house where we can make any flavor ice cream we want! Today, we made Salted Caramel Mocha Ice Cream. International Delight Salted Caramel Mocha Creamer is soooo incredibly delicious (the reason I use it in my iced coffee so often) and the little ones who are too young for coffee shouldn’t miss out, so they can enjoy it too while cooling off on a fun summer day.

Salted Caramel Mocha Ice Cream Recipe

(makes 2 quarts of ice cream)

Ingredients

2 cups International Delight Salted Caramel Mocha creamer
2 cups heavy whipping cream
½ cup cocoa
¾ cup sugar
3 tbs vanilla

Instructions

1. Prep your ice cream maker according to directions.
2. Mix together ingredients in large bowl with a whisk for about one minute.
3. Pour mixture into your ice cream maker. Most ice cream makers produce soft serve so freeze overnight in a container for a solid ice cream (preferably ceramic).
4. Scoop out ice cream and serve!

The boys have been having a great summer, from going to zoos and museums, to trying out new sports like tennis and lacrosse. My older son started hockey camp, and they both have been taking swimming lessons and visiting their nana’s pool for extra practice to become better swimmers.

The boys even went fishing for the first time on a boat, had an up close encounter with penguins, and learned a little about training seals at our local aquarium. Summer is a great time to focus on aquatic adventures, especially water sports and interacting with sea animals. They love animals, especially my younger son, so this was the summer of a lifetime!

It was a great summer, and I’m so glad it’s not over yet. And remember, ice cream solves everything 🍦
