Celebrate National Coffee Day With Pumpkin Pie Spice Coffee and Muffins

September 29th is National Coffee Day, and so much of the world adores and functions off of their beloved java fix. Everyday of my life for the past twenty years has begun with a delicious cup of coffee, and when it’s autumn, I always add a little of my favorite flavor enhanced creamer from International Delight- their seasonal Pumpkin Pie Spice flavor. It is so autumn in New York.

One of the most wonderful things about this time of year in New York is how utterly beautiful it is everywhere as the trees change colors. Whether you live in the suburbs on a tree-lined street, or Up State, New York where forests of crimson, copper, and gold stretch out for miles, the beautiful colors of fall are a visual feast. It makes me just want to sit around and relax for a bit, breathing slowly and taking it all in. It’s probably the only time of year where I actually sit still for a bit, because the boys are back in school and the cooler weather makes me want to cozy up indoors with a hot cup.

I was recently speaking to a friend who said her work week always ends on Thursday. Why? Because she doesn’t think her family should only get her part time, while her job gets her almost the entirety of five full days a week. This makes perfect sense to me, so going forward this new school year, my goal is to be in “off” mode every week starting Thursday evening, until Monday morning. I started an “End of Work Week” Ritual comprised of me doing fun things for me. Every Thursday afternoon, I buy some beauty and gossip magazines on the news stand, make a delicious snack and my pumpkin pie spice flavored cup of coffee, and sit on my couch completely uninterrupted to read and relax.

I can’t think of a better way to celebrate National Coffee Day, my new work schedule, and the beautiful season than with a cup of Pumpkin Pie Spice coffee, and since I had some time this week (an odd thing that apparently happens as your children become older and more independent- free time returns!), I made some Pumpkin Pie Spice Muffins. I can just pop one into the toaster oven to warm it up as a grab and go breakfast on busier days, or snack while I relax. They are a great treat for the boys in the evenings while doing homework too.

I’m sharing my recipe with you so you can also make some in time for National Coffee Day in three days. These muffins are wonderfully moist and full of flavor, and I hope you love them and enjoy them with your coffee ♥︎

Pumpkin Pie Spice Muffuns

Ingredients
makes about a dozen muffins

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup brown sugar
2 large eggs
1 cup International Delight Pumpkin Pie Spice
1/4 cup melted butter
1 cup pumpkin purée

Directions

1. Preheat the oven to 350°F. Coat the cups of your muffin tin with butter or line each muffin cup with parchment paper.
2. Whisk the flour, baking powder, salt, and sugar together in a mixing bowl, and set aside.
3. Crack the eggs into a separate mixing bowl and whisk until lightly beaten. Add the International Delight Pumpkin Pie Spice, butter, and pumpkin purée, and whisk until smooth.
4. Add the pumpkin mixture to the dry ingredients and stir until well combined.
5. Spoon the batter into the prepared muffin tin to fill each cup about 2/3 full, and bake for about 25 to 25 minutes (a toothpick should be able to comes out clean from the center of a muffin).
