Easiest Shredded Chicken Chili Recipe

This is a sponsored post written by me on behalf of Redpack Tomatoes. All opinions are 100% mine.

Family dinners are important to us, and become more important each year as our children grow older. If I want to keep my kids coming to our family dinner table for years to come, I have to make sure the food is always delicious. It’s the secret to being the favorite mom (and nana). That, and including them in the cooking fun.

Our meals are very varied, everything from spaghetti to tacos or chicken casseroles. The thing that stays the same is that I try to cook with the best ingredients, and make our meals hearty, because I’m feeding three males every night.

I like to use simple recipes, and the Shredded Chicken Chili recipe I’m sharing today is definitely easy and delicious for the time-crunched parent. The secret is Redpack Tomatoes, which are premium quality and homegrown in America, and available diced, seasoned and ready to use.

Redpack Tomatoes are packed in non-BPA lined cans, come from trusted family farms, and are non-GMO verified. If you, like most of us, can’t grow your own tomatoes in your backyard, you can feel good about choosing Redpack Tomatoes. They are 100% natural, and they taste better and look plumper right out of the can than competitors, and are more vibrant in color, which always looks more appetizing!

In the spirit of keeping things simple for you, I’ll share this recipe in one sentence:

Add Redpack 100% Natural Diced Tomatoes with Basil, Garlic, & Oregano to cooked and shredded chicken that is seasoned any way you like, and you have a complete meal.

We tend to cook our chicken in the slow cooker to make shredding it super easy (on high for 3-4 hours, then shred with a fork), but stove top is fine, as is using leftover chicken from the day before, and we never season it the same way twice- today I added cumin and salt only, other times I might add chili powder or coriander. I use whatever I have in the pantry that appeals to me at that moment.

I put the shredded and seasoned chicken in a pan, add the ready-to-use Redpack diced tomatoes, stir it together over medium heat for 3-4 minutes, and serve.

Redpack Diced Tomatoes with Basil, Garlic, and Oregano is a perfect choice because the tomatoes are already diced and seasoned, so we just toss it into the slow cooker, or add it to browned ground beef, mix it into shredded pork or over grilled chicken, or pour it over a hot plate of spaghetti… They’re so versatile, and making a delicious dinner becomes quick and easy. The tomatoes are so juicy and red that adding them to slices of French bread to make an appetizer is a great option- just add some shredded cheese and you have bruschetta.
