The Best Leftover Thanksgiving Turkey Sandwich

I partnered with Vive Mejor to share my own idea for a Thanksgiving leftovers sandwich.

There is nothing better than a good sandwich, and I’ve had some really great sandwiches in my day. Some are classics, some are uniquely inspired by trends or a region or culture, and some are just interesting concoctions created by adventurous people. In the end, though, they are all usually tasty in their own way, and today I’m sharing my own Holiday Leftover Sandwich with you, with a Latin twist ♥︎

A #TuTwist sandwich is a sandwich with a twist, because let’s face it… people have been known to put interesting things between two slices of bread. Major points for creativity, because some of those ideas end up becoming popular trends based on the combination of their deliciousness and shock value. My sandwich today isn’t shocking, but it is super delicious, and a terrific way to make the most of all that leftover turkey.

We love cilantro in everything, and Hellman’s mayonnaise mixed in with a little avocado and lime juice is incredible, so I created a spread with all four together. Add some sliced turkey and red onion, and you have the making of delicious (and pretty healthy) next-day lunch treat to bring to work or enjoy with the family now that everyone is too tired to cook.

Here is my Cilantro Guacamole Turkey Sandwich!


Cilantro Guacamole Turkey Sandwich


4 slices bread (for two sandwiches), toasted
left over Thanksgiving turkey meat, sliced
1/4 cup Hellman’s mayonnaise
1/2 avocado, scooped and mashed
1 small bunch cilantro, chopped
1 tsp lime juice
salt and pepper to taste
1 small red onion, thinly sliced

(makes two sandwiches)


Step 1

Mix Hellman’s mayonnaise and avocado together in a bowl with cilantro, lime juice, and pepper until until smooth.


Step 2

Toast two slices of bread and spread each slice thick with the Hellman’s mayo/avocado/cilantro mixture.


Step 3

Layer each piece of bread with thick slices of leftover Thanksgiving turkey and sliced red onion, then season to taste with salt and pepper.


Step 4

Press to sides of sandwich together, serve, and enjoy!
