My Organic Choice harvest so far (we have a bit to go yet as it’s early in the year, and it’s my first time ever growing flowers):
I’m growing lettuce in pots with the potting mix, and everything else (flowers, eggplant, and cucumbers) in the ground. Since I’m a major salad girl, I plan to eat healthy salads every day with my lettuce and cucumbers, and use the eggplant to make a delicious casserole (and once in a while, fried eggplant- a guilty pleasure!). I coat eggplant slices in a batter of eggs and panko and fry it in olive oil, and it’s sooo good!
