Summer is here, and we have lots of fun plans to look forward to! This year I plan to bring our little guys to swimming lessons, soccer camp, and join a local pool as a family so we can enjoy the sunny days while cooling off and having fun. We hope to also take a trip to Cape Cod, someplace my husband has been wanting to return to for a while (and it would be my first time).
We have so much we would love to do- zoos, museums, play dates at the park- and it always feels like those wonderful summer days pass way too quickly!
We especially love family get togethers, barbecuing in our back yard, and enjoying summer’s fabulous seasonal produce. I love fresh foods, especially fruit and veggies left as natural as possible. I particularly love asparagus recipes (any style), and during the summer we have it at least a few times a week. Here is a simple and tasty asparagus recipe for the summer I love that you may enjoy:

Asparagus with Sole Recipe
1 lb asparagus
1 lb sole fillets (4 pieces)
1 tbsp chives
1tsp mustard
4 tbsp lemon juice
salt to taste
1. Cut asparagus into 3 inch pieces. Boil in saucepan for 5 minutes and drain.
2. Season sole fillets with salt and lemon on skin side.
3. Plase asparagus spears at one end of each fillet and roll up fillet with asparagus spears inside. Secure with a toothpick.
4. Place fillets in a 2 quart casserole dish.
5. Combine remaining ingredients and pour over fillets.
6. Bake dish at 400 degrees for 15 minutes while basting fish every 5 minutes.
7. Serve hot.

I’m with you about enjoying seasonal produce, although I have to say Michigan corn was WAY better than the corn down here. It’s not fair! I always like making a fruit salad in summertime too. Of course, grilling burgers and dogs is a must too.

I never would have though to wrap it in Sole but I’m sure that gives it a nice, fresh taste!
It’s kinda funny, but suddenly all the teens in my house have decided that they love asparagus and ask for it all the time. This would be a huge hit!
One day we want to also (but our little guy is one so I think we need to wait a few years, lol)…when I was single, cruises with the gals were FUN!

Sounds like your summer will be full of fun! It’s too hot here in the summer to spend time outside {unless you’re in the pool} so we’ll be watching lots of movies, doing lots of crafts & preparing for preschool in the fall!

I have lots I want to do before the baby arrives in August, like take the girls to the zoo, pool, beach, amusement park, aquarium, etc. We’ll see how that goes since we have about 8 weeks until the baby comes.

That asparagus recipe looks tasty. Since it’s in season right now, I’ve been using it frequently.
We don’t have too many plans but are going to spend a week at the beach at the end of the month. I can’t wait.
I joined a local neighborhood pool (getting ready to take my son there in a few minutes), so plan on lots of pool time this summer. We have a zoo membership. We are checking out lots of local things (live in Knoxville, near the Smoky Mts., Pigeon Forge, & Gatlinburg), and leaving on Sunday to go to the beach for a week.
