Gluten Free Vegetable Supreme Pizza Recipe

I always love to try new things, and creating recipes is a lot of fun for me. A lot of people in my life are now following a gluten free diet, and I love to host get togethers, so I thought it would be a lot of fun to come up with some yummy gf recipes that everyone can enjoy, food that is so delicious no one would even notice it was gluten free.

I made a Vegetable Supreme Gluten Free Pizza recently at a family party just before Chicken Little was born, and it was a real hit. It tasted better than delivery pizza (in my not so humble opinion) and I wish I had made more. To be honest, I love being able to reassure my gluten-free friends that they don’t have to worry about diet restrictions when they visit me…there is no reason anyone should feel restricted when there are just so many great gf food products out there, such as Udi’s Gluten Free foods, and I never would have known this if I wasn’t willing to try something new and experiment a bit with gluten free cooking.

Vegetable Supreme Gluten Free Pizza Recipe

Ingredients
1 Udi’s Gluten Free pizza crust
2 tbs olive oil
2 tbs tomato paste
2 cups mozzarella, shredded
1 large red pepper, sliced
1 large green pepper, sliced
1/2 cup mushrooms, sliced
1 small onion, sliced
1 tbs basil, shredded

Directions
1. Preheat oven to 425 degrees F.
2. Spread olive oil over one pizza crust, then spread tomato paste over crust.
3. Cover pizza crust with mozzarella cheese (leave about 1/2 cup on side).
4. Spread vegetable toppings over pizza, and cover vegetables with remaining half cup of mozzarella cheese. Top with basil.
5. Cook at 425 degrees for 15 minutes, then remove from heat and allow to cool 5 minutes before serving.

I would never have been able to tell that Udi’s Gluten Free pizza crust is any different than other pizza crusts. It’s delicious, and since we have Whole Foods everywhere in our area, we are able to find Udi’s products easily. The guests love it, and are so impressed with the tasty pizza crust (and how easy it is to make homemade pizza) that they plan to try it on their own as well.
