Thanksgiving Scalloped Potatoes #ABettyTradition #AFamilyTradition

One of my favorite foods today is mashed potatoes, which is funny because it was something I avoided for years until my mid-20’s. I mean colorless lumps of mash? It sounded too vegetable-y, and unappealing (unless they were sliced and fried, I didn’t want anything to do with potatoes) and I had no idea how incredibly delicious they were, and so wasted many years of my life potato-less. Until one Thanksgiving I tried my grandma’s incredibly buttery, garlic mashed potatoes, and fell in love with this rich, starchy treat, and the rest is history.

Today I’m sharing a favorite, Betty Crocker’s Cheesy Crunchy Broccoli Scalloped Potato Casserole, because this year, grandma and the whole family is coming here, and I want to show grammy that I can take care of her now and make her a delicious potato side dish.

Cheesy Broccoli Scalloped Potato Casserole

Ingredients
2 boxes (5 oz each) Betty Crocker™ three cheese scalloped potatoes
4 cups boiling water
1 1/3 cups milk
4 tablespoons butter
1/2 teaspoon powdered garlic
1 bag (12 oz) frozen broccoli, cooked
1/4 cup bacon, crumbled

Directions
1. Pre-heat oven to 375° F.
2. Make the potatoes as directed on the box for stove-top directions, with potatoes, water, milk, and butter.. Stir in garlic. Add half the potatoes to baking dish, spreading evenly. Sprinkle broccoli over top. Pour remaining potatoes on top of broccoli. Sprinkle bacon on top.
3. Bake 12 minutes or until sauce bubbles. Let sit before serving, about 5-7 minutes (sauce will thicken during this time).
