Ro*Tel® Slow Cooker White Chicken Chili
Ingredients
PAM® Original No-Stick Cooking Spray
2 cans (15 oz each) Great Northern beans, undrained
1 pound boneless skinless chicken thighs
1 can (10 oz each) RO*TEL Original Diced Tomatoes & Green Chilies, undrained
1 cup reduced-sodium chicken broth
3/4 cup chopped yellow onion
1-1/2 teaspoons ground cumin
1 teaspoon dried oregano leaves


Directions
1. Spray the inside of slow cooker with cooking spray, and place one can of Great Northern beans inside. Mash with potato masher until smooth.
2. Add second can of beans and all remaining ingredients into slow cooker and mix to combine.
3. Cover slow cooker and cook chili on LOW 8 hours or HIGH 4 hours.
4. Stir and separate chicken into smaller pieces; serve.

So we got the tv ready, the room ready, and the recipes all planned out (I’ll also be trying out that 7-layer dip, wow! And of course nachos and guacamole, and maybe those tacos too). So enter the sweepstakes and plan out some fabulous recipes for your own party.




Slow cooker meals are perfect for game day. I’d like to try this one because it’s a relatively healthy recipe!
I can’t wait to try that recipe! I am trying really hard to create a menu plan which includes my slow cooker and this definitely looks like something the picky eaters in my house would inhale!
This looks good. I’m not a huge tomato fan but I love beans and chili this may be just up my alley.
I love white chicken chili – pair it with some cornmeal and I am one happy gal.
This is a nice spin on regular chili. I bet it smells amazing while it’s simmering away in the slow cooker!
It really does! But doesn’t the slow cooker fill the house with yummy smells all the time? I LOVE slow cookers 🙂

I tried this a few days ago and we didn’t care for it at all…it was bland and not very good – I felt like it was a waste of ingredients 🙁
