Pies are a delicious dessert treat for everyone, but for little kids, they can be very messy. This is why we started baking hand pies (well, that, and because they are just so cute). No plates and forks needed with hand pies, and no worry about spilling any tasty filling.
I love my time in the kitchen with my boys, because I feel like I just don’t spend that much time with them anymore. I also notice them spending way too much time on their gadgets (at 4 and 7- already!) and figure this is a way to teach them something they’ll always love doing, and that actually requires some creativity. And, I bet their future families will love having a dad who can bake 😉
This week we made Raspberry Hand Pies (from scratch- even the filling and the crust) and as always, our home was filled with the most luscious aromas… I love baking ♥︎
Here is our recipe:
Raspberry Hand Pies + French Vanilla Pie Crust
For homemade raspberry jam:
2 cups raspberries
2 cups sugar
For pie crust
2 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 stick butter, room temperature
1/2 cup French Vanilla Coffee Creamer
1 egg, whisked
(optional: sugar, for sprinkling on top of the pies)
To make jam:
1. Mash raspberries and place in a sauce pan over medium heat. Slowly bring to a boil, then continue to boil for a minute or two, stirring.
2. Pour in sugar, stirring continuously. Cook for about 8 minutes or until mixture thickens. Allow to cool in the refrigerator for 30 minutes before using in hand pies. It will thicken as it sits. Refrigerate remaining jam for toast!
To make hand pies crust:
1. In a large bowl mix together flour, sugar, baking powder, and salt.
2. Cut in softened butter in small pieces by hand.
3. Stir in International Delight creamer and form a soft dough.
3. Roll out dough on a lightly floured surface to about 1/4 inch thick, and cut into circles with a wide mouth glass or biscuit cutter. Use a small cookie cutter to cut vent into top crust (or create vents with fork after filling pies).
4. Spread two tablespoons of filling into each circle of dough and cover with second piece. Use fork to press sides closed and cut vents into top of uncut dough crusts.
5. Brush top of hand pies with egg wash, and place hand pies on a cookie sheet.
6. Bake for 25 min at 375°F, or until hand pies are golden brown. Let cool before serving.
The great thing about hand pies (in addition to being homemade with delicious ingredients) is that you can take them on-the-go, a sort of dessert anytime. The boys can each grab one and run out to the backyard to play while munching on a yummy treat they just helped make. And the flavored crust gives it something extra- they make a great gift to welcome new neighbors to the neighborhood or to surprise one of the boys’ classrooms with during the year. Super pretty in a lined basket!
