Cobbled Chicken Pot Pie Recipe

This post is sponsored by Bays English Muffins. All opinions are my own.

Autumn is a time for flavorful, hearty, and delicious recipes. The scents of the season, the yummy baked foods, and seasoned casseroles create amazing recipes with wonderful aromas that fill the house with a cozy blanket of anticipation. A recipe of chicken pot pie is perfect for this time of year, when the weather turns cooler and we feel the need to snuggle up with a bowl of something hot. I recently partnered with Bays English Muffins to share how easy it is to make chicken pot pie for your family, especially when you make it with Bay’s English Muffins. Bay’s English Muffins are more than just a breakfast food, and our delicious Chicken Pot Pie proves this!

Growing up, the only time we were allowed to enjoy toasted English muffins was in the early morning for breakfast. It was a sort of unwritten rule, like not being able to wear white after Labor Day. It just wasn’t considered a versatile food back in the day- boy, were we missing out! Luckily, Bays English Muffins has rewritten the rules, showing millions of people that English muffins are great for any time of day, not just for breakfast. Bays chefs are proving the versatility of English muffins with creative recipes for appetizers and snacks, like Bacon, Beer & Cheddar English Muffin Wedges, mini pizzas, sandwiches, melts, paninis, burgers, and of course, beloved sides like garlic bread.

Of course, we utterly love our chicken pot pie (found on Bays.com under Cobbled Chicken Pot Pie), and share it here (sans bacon):

Hearty Chicken Pot Pie Casserole

Ingredients

4 BAYS Multi-Grain English Muffins, split and halved, and cut into strips
2 large eggs
1 1/2 cups milk, divided
1 cup shredded Gruyere cheese
1/4 cup grated Parmesan cheese

2 (10 1/2-ounce) cans cream of chicken soup
3 cups shredded cooked chicken

Directions

1. Preheat the oven to 400°F. Grease a 2-quart baking dish.

2. Beat the eggs and 1/2 cup of the milk in a medium bowl until well blended. Stir in the muffin cubes, Gruyere and Parmesan cheeses; set aside.

3. Heat a 12-inch nonstick skillet over medium-high. Add the onion and sauté until slightly softened, 3 to 4 minutes. Stir in the mixed vegetables; sauté until hot, 3-4 minutes. Stir in the soup and remaining 1 cup milk; bring to a boil and cook 1 minute. Remove from the heat and stir in the reserved bacon and chicken. Transfer the mixture to the prepared baking dish. Top the filling evenly with the muffin mixture.

4. Bake until the topping is golden brown and the filling is bubbly, about 20 minutes. Remove from the oven and let cool 5 minutes before serving.

Now tell me truly… doesn’t this look amazing?? Delicious, hearty, hot- the perfect comfort food!
