Cheese is a favorite food for many of us, and Wisconsin Cheese is one of the most well-known names in the tradition of cheese-making. Wisconsin Cheese is the brand name of the Wisconsin Milk Marketing Board, and after learning that an average serving of cheese contains 10g of protein, and 20% of our daily calcium, I realized one of my favorite foods is probably one of the healthiest.
We recently met with members of the WMMB at the Summer Fancy Food Festival in New York City, where we learned about the magic of making some of the world’s best cheeses, as well as the variety available for every taste bud, and some cheese and food pairings that would be terrific for snacks or appetizers, such as:
* Grand Cru + Candied Ginger
* Dunbarton Blue + Spiced Pecans
* Gouda + Dried Pineapple
* Hummus + Provolone Wraps
* Strawberry + Monterey Jack

There are more than 600 varieties of Wisconsin cheese, and we were sent five varieties of Wisconsin Cheese to enjoy, all delicious and all (surprisingly) kid-friendly, which made my brain start to spin. From soft mozzarella, to semi-soft gouda, to hard cheddar, any would be a popular choice in a lunch box, so how could I elevate their lunch with some of these tasty cheeses with some other healthy food pairings?
How about delicious chunks of award-winning Marieke Aged Gouda with organic dried mango? I ♥︎♥︎♥︎ this!! I make this a lot. How about baby carrots wrapped with a mozzarella whip? Or the most delicious cheese sandwich ever, with Hook’s 3 Year Cheddar slices, tomato slices, a layer of Wisconsin cheese curds, and baked ham, all baked in a toaster over for 5 minutes on toasted rye bread- it’s amazing!
And my favorite way to enjoy it- super easy stuffed bread rolls!
Mozzarella Stuffed Bread Rolls
Ingredients
1 package premade pizza dough
1 mozzarella rope
2 tablespoons butter, melted


Directions
1. Preheat the oven to 350ºF.
2. Cut mozzarella rope to desired length per person.
3. Roll out dough into a long thin rope and wrap around each cut piece of mozzarella rope, from one end to the other.
4. Place wrapped mozzarella rope onto greased baking dish and bake for 30 minutes (until golden brown)
5. Remove from heat, brush with butter, serve and enjoy!

In our home any Blue Cheese is the one we love the best.
My favorite cheese is Gruyere, it has a great bite and makes a wonderful Mac & Cheese when paired with a medium or sharp Cheddar! I make pizza a lot and like to use a variety including Mozzarella (of course), Brie, Cheddar, Parmesan, Gouda, etc.

I am a big blue cheese fan! I love it in salad, added to a sauce with mushrooms to top grilled meats, on a sandwich or just by itself!
My favorite is French Raclette. So good, but so hard to find in stores.
