I cook for a family of four every day, and some days even more, so preparing good meals for my family can take a great deal of time if I make everything from scratch. Making dinner doesn’t have to be stressful, and on weekdays when I really don’t have time to spend hours a day preparing three meals, I’ve been using Alexia Foods frozen sides. I’ve been on a lettuce wraps kick lately because I love the way a crisp leaf of romaine lettuce tastes brimming with delicious filling, and they are pretty quick to make while still being all natural. Today I’m sharing my recipe for Greek Chicken Salad Lettuce Wraps with Alexia Sweet Potato Puffs.

Greek Chicken Salad Lettuce Wraps
Ingredients
1 lb boneless skinless chicken breast, cubed and grilled
romaine lettuce leaves
1/2 red pepper, diced
1/4 cup black olives, sliced
1 small red onion, sliced
1/4 cup feta cheese
1 package Alexia Sweet Potato Puffs


Directions
1. Bake sweet potato puffs in preheated oven at 425º F for 25 minutes.
2. While sweet potato bakes, grill chicken in a skillet in a tablespoon of olive oil for 4 minutes on each side and set aside.
3. Wash and dry lettuce leaves, and fill each with grilled chicken.
4. Top chicken with pepper, olives, onion. Crumble feta cheese on top. (optional- drizzle olive oil over each wrap)
5. Serve Greek chicken salad lettuce wraps with sweet potato puffs and enjoy!
It’s easy to do, takes less than 30 minutes from the time you pop the sweet potato puffs into the oven to when it is all ready to serve, and it’s a well-balanced meal that is all natural, with real ingredients. You can of course mix it up and add your own toppings to the lettuce wraps, or a different Alexia side, but we loved this simple meal!
