New Year, new you? Is this the year you’ll be getting back in shape? I know I have some fitness and health goals for this year, now that I’ve had my second son and can focus on weight loss again. First, to lose that last five pregnancy pounds, and secondly, to get back my rubber tummy (you know, a tummy so tight you can bounce a quarter off of it)….I just need to find time between cooking, cleaning, watching two boys, nursing, moving, blogging, etc.
it it’s important, you’ll find a way. if it’s not, you’ll find excuses. i’ll find a way.

And here is my Gluten Free Penne Primavera Recipe, to start off on the right foot for better healthy in 2013!

Gluten Free Penne Pasta Primavera Recipe
Ingredients
1 box gluten free penne pasta
6 spears asparagus, cut into 1 inch diagonal slices
4 tablespoon olive oil
1/2 cup chopped pepper
1 garlic minced
1/2 cup chopped tomatoes
1 tbs fresh chopped dill
1/2 teaspoon salt
pepper to taste
Instructions
1. Cook penne according to instructions on package.
2. Blanche the asparagus in boiling water for 1 minute, then quickly remove from water and drain.
3. Saute garlic in olive oil until lightly brown. Add in pepper for one minute, and finally asparagus. Stir together for one to two minutes over low heat. Finally stir in tomatoes, salt, and dill for one minute (stir continuously while adding in each new ingredient and keep heat low).
4. Pour vegetables over penne and mix to coat. Serve and enjoy!

This recipe looks delicious! We made the switch to quinoa pasta about four months ago and I can’t see us ever returning to the standard type again.
