Ingredients
1 onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons chili powder
1 can crushed tomatoes
3 cups organic vegetable broth
1 1/4 cups water
1 cup whole corn, drained and rinsed
1 green pepper chopped
1 15 oz can black beans, rinsed and drained
1/4 cup chopped fresh cilantro
shredded Monterey Jack cheese
1 green onion chopped
crushed tortilla chips
Directions
1. In a medium stock pot, heat oil over medium heat.
2. Saute onion and garlic in oil until soft.
3. Stir in chili powder, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
4. Stir in corn, pepper, beans and cilantro. Simmer for 10 minutes.
5. Pour soup into bowls and top with crushed tortilla chips, cheese, and chopped onion. Enjoy!
Perhaps the title of the recipe should be changed to Meatless Tortilla Soup – I’m no vegetarian, but I’m thinking vegetarians don’t eat chicken broth, since it’s made from chickens…
Vegetable broth would likely make a nice substitute though for vegetarians.
That sounds so yummy. I know we love chicken tortilla soup so I may have to try this version sometime.
