Thumbprint Butter Cookies w. Lingonberries Jam

Felix makes its Lingonberries Jam from fresh wild berries, and the popular tart-sweet jam was recommended by Dr. Oz for its super fruit properties (it’s loaded with antioxidants!), and it won a 2016 National Parenting Products Award. That means making your kid’s peanut butter and lingonberries jam sandwich for lunch at school is like sending him to school with an award winning lunch ;)

Felix Lingonberries Jam appetizer

The ingredients are simple and pure- just wild lingonberries, sugar, and water. Nothing artificial, no preservatives, and fyi- Swedes are particular about their berries (many pick their own), so if Felix is #1 in Sweden, it’s because it’s the best.

Here is our favorite way to enjoy them so far- in butter cookies!

Lingonberries Jam Butter Cookies with Spiced Apple and Cinnamon

Thumbprint Butter Cookies w. Lingonberries Jam

Ingredients

2 cups flour
1 cup butter, softened
3/4 cup sugar
1 1/2 tsp vanilla
5 tbs Felix Lingonberries Jam with Spiced Apple and Cinnamon

(makes about 12-15 cookies)

Directions

1. Preheat oven to 325º F.

2. Combine butter and sugar in a bowl and beat together with a wooden spoon until smooth. Add vanilla and stir until well blended, then add flour and mix into a dough.

3. Take about 2 tablespoons of dough and roll into ball, flattening out to about 1/2″ thick on a light floured surface. Continue until all dough is used to create flat cookies.

4. Use the back of a tablespoon to create an indentation in the center of each cookie, and fill with one teaspoon of jam. Use spatula to gently lift cookies and place onto parchment lined cookie sheets.

5. Bake at 325ºF on the middle rack until cookies are lightly golden, about 15 minutes. Remove from heat and let cool.
