Homemade Keto Pizza

I love pizza, but I became a little tired of scraping the toppings off the crust in order to eat it bread-free. I basically mainly love the cheesy, saucy topping piled high with black olives or chicken or other delicious pizza toppings, and the rest was wasted. I do actually love a good crispy crust too, but not enough to start gaining weight again (empty carbs are my nemesis), so when a friend suggested I try to make a crispy, yummy pizza “crust” with just just cheese and an egg, I was astonished… I can do that??

YES I can, and so can you! It’s so delicious, and you can top this delicious, keto crust (that’s calcium and protein packed) with your favorite pizza toppings and not feel like you are missing out at all. You can go all out adding extra cheese, make it chewier or crunchier (depending on how dry the cheese is), and it’s a great alternative to a thin crust pizza. Add sugar-free tomato sauce with your favorite spices, extra cheese and pepperoni and black olives and onions and garlic powder (my faves!), and it’s amazing. Since my diet is primarily low carb, no fake sugar or white sugar or white flour, keto keto keto, it’s perfect. It’s also great for anyone who can’t tolerate gluten or just wants to add more protein to their diet.

Here is the super easy recipe:

Penelope’s Favorite Keto Cheese Crust Pizza

Ingredients

1 1/2 cups shredded organic mozzarella cheese (absorb moisture on a paper towel for a crunchy, crispy crust, or leave it be for a juicier, chewy crust)- can also use parmesan cheese!
1 whole organic egg
1 cup tomato sauce of choice (Italian spices, meat lovers, etc)
Toppings of choice (optional)

Directions

1. Preheat oven to 425º F.
2. Combine the mozzarella and egg into a bowl and stir together until well mixed (do not beat egg first).
3. Spread out the mixture in a pie plate and bake at 425º F for 8-10 minutes (until baked). Remove from oven to add sauce, extra cheese, and toppings, then bake an another 5-7 minutes (keep an eye first time to learn how long it takes your oven to bake your pizza without overcooking).
4. Let cool, then cut into slices and enjoy!!

We’ve made this recipe both with mozzarella cheese (provides a thicker crust and tends to be chewy and juicy) and parmesan cheese (makes a great thin crust that is very crispy and crunchy), and it’s so delicious both ways. It’s easy for kids to make too for a fun, “family cooks together” evening (everyone can make their own individual pie and add on their own favorite pizza toppings).
