Roasted Brussel Sprouts + Cranberry Quinoa Medley

Mixing it up in the kitchen can lead to tasty results, and after making a Roasted Broccoli + Quinoa Lettuce Cups with TruRoots Roasted Garlic Quinoa and Brown Rice some months back, I wanted to try other flavors as well in other recipes. Autumn is a great season for having fun in the kitchen and experimenting, because there are sooo many great options for delicious produce that are available- think pumpkin, cranberries, brussels sprouts, butternut squash, and so much more! Taste buds never have it so good as they do in the fall, when fresh veggies are plentiful and the colors are as vibrant as the flavors. For me, someone who loves vegetables, it’s my happiest eating and entertaining season.

For my newest simple, yummy recipe that is simple and fast for parents to make, while also providing family a nutritious meal, I made a Roasted Brussel Sprouts + Cranberry Quinoa Medley dish with TruRoots Organic Quick Cook Spanish Style Quinoa, Brown Rice and Red Bean Blend. It cooks up fast (typical of TruRoots Quick Cook Quinoas), so I can offer my family delicious, wholesome grains such as quinoa and brown rice without waiting a looong time for it to cook. I love brussels sprouts (it’s one of the vegetables you discover the amazingness of as an adult and realize you didn’t appreciate enough as a kid), and when roasted in olive oil and sprinkled with sweet cranberries, it becomes a savory dish children will enjoy as well.

Roasted Brussel Sprouts + Cranberry Quinoa Medley

Ingredients
2 packages TruRoots Organic Quick Cook Spanish Style Quinoa, Brown Rice and Red Bean Blend
1 lb brussels sprouts, rinsed and halved
1 cup dried cranberries
olive oil
seasoning to taste

Directions
1. Preheat oven to 425º F and bake brussels sprouts in a baking dish, drizzled in olive oil, for 25 minutes.
2. Cook TruRoots Organic Spanish Style Blend on stove top over medium heat as per directions on package until heated through (or microwave in vented package for 60 seconds).
3. Mix TruRoots, brussels sprouts, and cranberries in a bowl, serve, and enjoy! Serves four very well.
