The Best Shrimp Scampi Recipe

We just enjoyed shrimp scampi at home, which I made in an open skillet. I discovered ceramic cookware about two years ago when I was looking for a new potto make my awesome chili, and that looks great on my stove top, so when I was looking for a new skillet, I knew ceramic cookware would be the way to go.

Here is my favorite recipe for shrimp scampi:

The Best Shrimp Scampi Recipe

Ingredients
1 lb large shrimp, cleaned and de-veined, tail-on
3 tbs extra virgin olive oil
3 garlic cloves, minced
1/2 tsp red pepper
3 tbs organic salted butter
1/3 cup white wine
2 tbs chopped parsley
1 tbs fresh lemon juice
1/2 tsp ground black pepper
Sea salt to taste
1 lb spaghetti

Directions:
1. Heat skillet on high for one minute and add olive oil and butter. Reduce heat to medium and saute garlic and red pepper for one minute.

2. Add shrimp and white wine and stir until coated. Spread the shrimp out in the skillet and cook over high for 3 minutes (wine will boil).

3. Turn shrimp over and cook one more minute. Turn off heat and add parsley and black pepper. Stir and add lemon juice and sea salt. Serve over spaghetti.

    The ceramic pots look great but I couldn’t stand having to use a pot holder every time I cooked something on the stove.

    The pan actually comes with a silicone sleeve that is fitted to stay on it if you choose, but I don’t think the handles get hotter than my stainless steel or cast iron cookware so I don’t use the silicone sleeve much.

    Whether serving it as an appetizer or tossed with linguine for a main course, learn how to make shrimp scampi for a dish laden with all the flavors of the Mediterranean. It’s important to know how to clean and devein shrimp, as the raw shellfish typically come with the shells on and the intestinal tract (the dark “vein” along the top) still inside. Simply peel off the shell–it’s up to you whether or not the tail stays on for presentation. Run a paring knife down the back of the shrimp to remove the vein. White wine is an important ingredient in shrimp scampi–this isn’t the time to use subpar wine. Select a bottle that you’d be happy to sip along with the dish. This doesn’t mean you’ll need to spend a fortune; there are plenty of budget-friendly, good-quality wines available. Resist any temptation to skip the fresh herbs. Not only do parsley and thyme add a bit of color to the dish, they also help brighten the flavor considerably. Add the herbs just before serving so they maintain their maximum flavor.
