Buttermilk Banana Bread Recipe

Our family loves banana bread! It’s great for breakfast, a snack, or even dessert. This recipe for Buttermilk Banana Bread is so easy, yet produces a high yield of servings with very little effort.

This banana bread recipe was created by accident. One day, I was cleaning out my freezer and noticed I had quite a few frozen bananas in there that needed to be used. I started with my usual recipe for banana bread and decided to start experimenting and changing up the ingredients.

When baking with buttermilk, I generally never use an entire container of it. So, this particular day I had buttermilk on hand from another recipe I made and added it to the banana bread batter, hoping for good results. While I was at it, I also threw in a little extra sugar and some cinnamon to add another level of flavor to the recipe.

It was an instant hit with my daughter and I but the real test was serving it to my husband. Banana bread is such a comfort food and he gets a little nervous when I mess with what he deems perfection, but he deemed the changes a success! This has become my new go to recipe for banana bread…when I have extra buttermilk on hand, of course! Enjoy!

Serve warm with a pat of butter for some homemade deliciousness!

Buttermilk Banana Bread Recipe Ingredients
• 1/2 c. salted butter, room temperature
• 3/4 c. brown sugar
• 1/4 c. white sugar
• 2 c. all-purpose flour (you can also use a wheat/white mix)
• 1 tsp. baking soda
• 1/8 tsp. cinnamon
• 2 eggs
• 3 T. buttermilk
• 3 c. overripe bananas (3-4 bananas, depending on size)

Instructions
1. Preheat oven to 350 degrees F.
2. Lightly coat a 9×5 loaf pan with cooking spray.
3. Cream butter and sugar together using a mixer. Set aside.
4. Mash bananas with a fork and beat eggs and buttermilk into mix.
5. In a separate bowl, mix flour, cinnamon, and baking soda.
6. Incorporate wet ingredients into dry; stir until completely mixed.
7. Pour mix into loaf pan.
8. Bake for approximately 60 minutes, or until a toothpick inserted comes out clean.

    Recipe sounds delicious. Glad to know your husband enjoyed it; hope mine will as well. But I had no idea you could freeze bananas! Are they still edible by themselves or just for use in recipes? When is the optimal stage for freezing?
