Healthy Loaded Lentil Chips + A Giveaway

I love a good appetizer of loaded chips. Let’s be honest, it’s a full meal, and it’s delicious. It’s shareable, but you may not want to, and if you make some for everyone, you won’t have to. But how does a dish of yummy loaded chips become a meal? Healthify it, with Saffron Road Lentil Chips and all healthier veggies and toppings.

Saffron Road snacks are plant-based, including chickpeas and lentils for a good source of protein and folic acid. They offer more nutritious value than standard snacks, are much lower in fat than regular chips, gluten-free and non-GMO while being high in fiber and sustainable. Saffron Road offers Baked Lentil Chips in a variety of flavors, such as Sea Salt, Cucumber Dill (my favorite as a snack on its own), Garlic Parmesan, Rosemary, Cracked Pepper, and Moroccan Barbecue (another favorite). The Saffron Road Lentil Crackers are available in Sea Salt or Rosemary Herb, and the Saffron Road BeanStalks are offered in Cheddar, Sea Salt, and Barbecue.

The Saffron Road Chick Peas Sea Salt are amazing over a salad- they are crunchy crisp baked chick peas!

But my favorite way to enjoy Saffron Road snacks are loaded with lots of healthy toppings!

Healthy Loaded Chips Recipe

Ingredients

1 bag Saffron Road Rosemary Lentil Chips
1 cup cooked chicken, diced
assorted bell peppers, chopped
1/2 small onion, chopped
2 tbsps extra-virgin olive oil
1 cup shredded cheddar cheese
sour cream and lime juice (optional)

serves 4

Directions

1. Layer Saffron Road Lentil Chips at bottom of one microwave-safe large bowl (or four individual stoneware serving bowls), and top with chicken, peppers, onions, olive oil, and finally cheese.
2. Serve as is or heat for 30 seconds in microwave or 5 minutes at 350 in oven.
3. Remove from heat, let cool 5 minutes and serve.

(my sons won’t eat melted cheese in anything so we serve it layered and unheated)
