The Best Summer Lunches #ElliosPizza

Summer time lunches are best enjoyed outdoors here in New York, because the weather is so beautiful and warm. I love summer days. I love the sunshine. And now that I’m a mom I love watching my boys play outside in our yard on these beautiful days.

Obviously, when it’s time to eat, I can’t make them stop the fun just to come inside and eat! I bring the lunch outside, to keep the fun going… and I join my sons in soaking up some more of that beautiful sunshine!

My sons’ favorite snack is Ellio’s Pizza. They probably love it for the same reason I do…it comes out of the oven with a divinely crispy crust, and gooey, yummy melted cheese. I have been cutting the rectangle slices into long thin slices that I roll up to create pizza roll-ups, and also into smaller rectangles and squares so they can grab a piece and keep running around and playing. Everytime they are ready for the next bite, they run back to the table and just take another off the platter.

There are a lot of patriotic holidays this time of year, so all summer long when I make a platter of Ellio’s Products to take out to them, I decorate the pizza squares with American flags and pin the pizza rolls with stars. They make it easier to grab a delicious Ellio’s Pizza roll or pizza square, and my boys love it. Sometimes they help me make lunch- I cut, and they roll and pin. It’s fun time together! Then we head out with our water or iced tea bottles and Ellio’s Pizza snacks, and enjoy the day.

Ellio’s Pizza launched here on Long Island over 50 years ago, so it’s perfectly fitting that it’s still enjoyed by the local residents, as well as the rest of the country, all these years later.       It doesn’t seem that way, a few people who used the store locator mentioned they couldn’t find it carried anywhere near them, so you have to check and see :)
