Spinach And Feta Wraps Recipe

Scrambled eggs are a favorite family recipe, something even my littlest ones will eat (and it’s hard for me to find something everyone in my family agrees on). I don’t make it as often as I should, and that is simply because taking the time to crack and separate the white and yolk in all those eggs is too time-consuming. I don’t want to do that on busy mornings! And most mornings for us are busy (and I only like egg white omelettes, so separate I must).

Because AllWhites® Egg White can really be used in any recipe that calls for eggs, I wanted to share my recreation of their Spinach And Feta Wraps recipe:

Ingredients

1 cup AllWhites® egg whites
1 tsp. chopped basil
1/2 cup chopped fresh baby spinach leaves
1/3 cup crumbled feta cheese
2 whole-wheat tortillas
8 grape tomatoes, sliced

Directions

1. Heat a 10 inch skillet over medium.
2. Pour AllWhites® egg whites into skillet and stir in spinach and basil. As eggs start to set, lift the edges with a spatula to allow uncooked eggs to flow to bottom of skillet.
3. Cook until eggs set and sprinkle with feta; cover and cook 1 minute longer. Cut in half.
4. Top tortillas with tomatoes, then eggs, and roll up and secure.

I changed their recipe a bit to accommodate what we have in our fridge and pantry (and our taste), and it was delicious! And no egg shells in our food! This recipe can be easily doubled for a family lunch and each wrap offers a whopping 26 grams of protein! (more than half of what women should have in a day).
