Grilled Pineapple Chicken Kebabs Recipe

February is Heart Health Month, and in my family we strive to cook meals that are healthier for us. After cooking an amazing recipe for Slow Cooker Chicken Tinga Tacos a couple months back that has now become a family staple, I tried some other recipes that lean toward lighter cooking (I’m just not really a fan of foods with heavy sauces or breaded and fried) and we found another favorite that my family is now requesting again and again.

The Pineapple Chicken Kebabs I’m sharing with you today is a twist on Mazola’s Pineapple-Chicken Skewers with Passion Fruit Glaze (my less fancy version is a result of the fact I don’t usually keep passion fruit nectar in my pantry, otherwise, I’d love to try a tasty and delicious glaze). It’s incredibly tasty and grilled for extra flavor, and most importantly, it’s healthy.

Pineapple Chicken Skewers

Grilled Pineapple Chicken Kebabs

Ingredients

2 pounds boneless, skinless chicken breasts, cut into 1 1/2-2 inch cubes
1 medium red onion, cut into 24 (1-inch) pieces
1 cup pineapple, cubed
1 cup assorted bell peppers, cleaned out and cut into 1 inch pieces
1/2 cup Corn Oil
Sea salt
Rosemary
Oregano
Freshly ground black pepper
Skewers

Pineapple Chicken Kebab Skewers

Directions
1. Combine corn oil, rosemary, and oregano into a bowl and season to taste with salt and pepper. Add chicken and coat. Cover bowl and refrigerate at least four hours (or let marinate overnight).
2. Preheat stovetop grill over high heat.
3. Remove chicken from the marinade and discard marinade. Thread chicken, onion, pineapple and peppers onto each skewer, and repeat until each skewer is full.
4. Grill pineapple chicken skewers on the grill pan for about five minutes, then turn and cook an additional five minutes.

  • I could do this. I love dinner out of the slow cooker, and the kids do too. And I could put anything on a skewer and they will think it’s cool and delicious.
