Chicken Paella Dinner

Valentine’s Day is next week, and we already know we are going to be celebrating our Valentine’s Day indoors! We started this tradition several years after we were married, when we realized a cozy and relaxed night indoors with a delicious home-cooked meal was much more fun than waiting to be seated at an extremely busy restaurant on one of the three busiest nights of the year (after dealing with snow and traffic and everything else that comes with a New York February evening out on the road). This year Valentine’s Day is on Saturday, so it will be even more hectic out there, but we don’t have to worry about that…we will be snuggling indoors and enjoying a delicious Chicken Paella together by candelight.

I found a recipe I thought would be perfect for two on Alexia® Foods website for Chicken Paella with French Green Beans. Alexia® Foods is a line of premium, all-natural frozen potatoes, breads and side dishes, that go from freezer to table in less than 30 minutes. This recipe features both their French Herb Green Beans and Hunt’s® tomatoes, which are grown in sunny California and canned within hours of being picked,and both are welcome in many recipes in my kitchen…I hope you enjoy the Chicken Paella!

Chicken Paella with French Green Beans Recipe

Ingredients

3 tablespoons, divided
1 pound boneless skinless chicken breast, cut into 1-inch chunks
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 small onion, chopped
2 cloves garlic, chopped
1 and 1/2 cups white long-grain rice, uncooked
2 cups chicken broth
1 can (14.5 oz each) Hunt’s® Diced Tomatoes, undrained
1 pkg (11 oz each) Alexia® French Herb Green Beans

Directions

1. Heat two tablespoons olive oil in a cast iron oven over medium heat. Add chicken, salt and pepper and cook for seven minutes until browned on all sides. Set aside in a bowl.
2. Add one tablespoon olive oil to oven and heat. Add onion and garlic and stir for three minutes until tender, then stir in rice and stir for two minutes, coating well.
3. Add in broth, undrained tomatoes and chicken to oven and bring to a boil. Reduce heat to simmer and cover, and cook for 10-12 minutes.
4. Stir in frozen green beans and cook covered for 5 to 8 minutes until rice is tender and chicken is cooked through. Remove from heat, and let stand 5 minutes before serving.
