Almond & Artichoke Hummus Recipe #MeatlessMondayNight

We are a family that definitely eats a bit too much meat, and it’s healthier to enjoy a more plant-based diet. It’s good for us, and it’s good for the planet too, so I recently decided to remix some favorite recipes for my family into versions that are both meatless and dairy-free and still amazingly delicious.

I usually create good habits by changing a little bit at a time, so starting our new plant-based diet one day a week is a great way to ease my family into a change that frankly, will be good for them in the long run. I embarked on a #MeatlessMondayNight challenge, and during Monday Night Football games no less! We host football parties and I wanted to serve our guests some new meatless recipes options…after all, if it’s a hit with the tailgating crew, it’s a hit.

Silk Soymilk products are a plant based alternative to yogurt and other dairy that can really substitute milk in almost any recipe. It’s a perfect way to create meatless and dairy-free versions of some of our favorite game night recipes, especially since some of our guests are lactose-free and appreciate recipes without dairy- so no one is left out or unable to enjoy any of the yummy dishes at our parties!

Monday Night Football Recipe Remix: Almond & Artichoke Hummus

Ingredients
2 cans Cannellini beans or Great Northern beans
1 can artichoke hearts (drained)
1/2 cup Silk Almondmilk
juice of two medium lemons
3 cloves garlic
salt to taste

Directions

1. Add first five ingredients into a blender and process until very smooth.
2. Remove from blender, add salt to taste, and stir. Garnish and serve with pita chips or tortillas.

I love hummus…I mean love hummus. Everything dips well with hummus (chips, veggies, crackers, etc) so I make it often, and of course it’s on our buffet table during tailgating parties. Traditional hummus is made with chick peas and oil, but I love making it with Cannelloni or Great Northern beans instead because they are so much lighter, adding in artichoke hearts for a surprisingly delicious flavor- just try it and see! I found Silk Almondmilk to be a perfect replacement for olive oil, allowing us to blend it smoothly to a wonderfully creamier version of our family hummus recipe.

This recipe is also dairy-free and gluten-free, and one of my favorite meatless recipes. There are no artificial colors, flavors or preservatives here, and it’s cholesterol free too! Anyone can enjoy it.
