Cereal, oatmeal, waffles— my kids love all breakfast foods. Breakfast isn’t always my most creative meal since I’m typically frantically making lunches and trying to get the kids out the door on time. But with the holidays approaching I wanted to find ways to add a little more flavor to the family’s favorite meal.
To infuse a little holiday flair, I swapped out regular milk for International Delight’s Peppermint Chocolate Truffle Creamer in my standard waffle recipe. The result was moist and fluffy waffles with the perfect amount of peppermint and chocolate.
My baking assistant was thrilled with the opportunity to help out in the kitchen when preparing this recipe. She calls homemade waffles “Grandma Waffles,” since my mom rules over the waffle iron. I may not be Grandma, but I’m thrilled with how these Peppermint Chocolate Truffle waffles turned out.
Peppermint Chocolate Truffle Waffles Recipe
2 large eggs
2 cups all purpose flour
1 1/2 cups International Delight Peppermint Chocolate Truffle Creamer
1/2 cup sugar
1 cup butter, melted
3 teaspoons baking powder
1/2 teaspoon salt
1. In a bowl, beat eggs until fluffy
2. Add in butter and creamer and beat together.
3 In a separate bowl, add flour, sugar, baking soda and salt and mix together. Add to bowl with eggs and stir to blend.
4. Bake batter in waffle iron as directed by instructions.
My children inherited my sweet tooth, so they wanted their already decadent tasting waffles to be topped with their favorites. One preferred whipped cream and chocolate chips on hers while another made it snow powdered sugar.
