Hearty Potatoes and Beans Minestrone

There are only three things I require for family meals: that they be healthy, tasty, and easy to make. Not necessarily quick, although I don’t mind that either, but I’m not really the type to spend hours making meals from scratch. I prefer to buy healthy ingredients that are as ready for cooking as possible to save time. As long as what ends up on our table is nutritious and delicious, I don’t think I win any points for spending an extra hour preparing ingredients from scratch.

This weekend we made a hearty stew in our French oven on the stove top with Simply Potatoes Diced Potatoes with Onion, a recipe I adapted from Simply Potatoes Favorites, with my own twists and changes. They have a slew of great recipes to inspire your family meals as well.

Hearty Potatoes and Beans Minestrone

Ingredients

1 package Simply Potatoes® Diced Potatoes with Onion
4 cups chicken broth
1 cup water
1/2 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon thyme
1 cup tomato sauce
1 can (15 ounces) white cannelloni beans, drained
1 can (15 ounces) red kidney beans, drained
1/2 cup uncooked orzo
shredded parmesan cheese

Directions

1. Combine Simply Potatoes, broth, water, basil, salt, and thyme in French oven or sauce pan. Bring to a boil and reduce heat to medium low to let simmer for about 15 minutes.

2. Add tomato sauce, cannelloni and kidney beans, and orzo to pan and cook for 12 minutes.

3. Pour into individual serving bowls or cocottes and top with parmesan cheese.

My children aren’t at an age where they try to hide broccoli in the milk, but my older son still isn’t a fan of vegetables, so I have to make kid-friendly meals that taste good and sneak some nutritious items in there. The mashed sweet potatoes look moldable (play time!) but are healthy and delicious, so even if it’s messy, they will eat it. I spend evenings helping my son with his homework, not ordering to finish his meal.
