Light Summer Grilled Chicken Salad With Pumpkin Vinaigrette

I’m a salad lover, this is no secret. I could eat a romaine lettuce salad with grilled chicken every day (and pretty much do). What was news to me though was how awesome pumpkin is with almost everything, which I discovered recently when challenged to see all that pumpkin can do…it can do lots! It tastes great with practically everything, and is so versatile that I can make everything from pumpkin ravioli to pumpkin hummus with it.

So because salad is one of my most favorite things ever, and because I knew I could incorporate vitamin filled, delicious pumpkin into it somehow to make it even better, I rose to the challenge and created a pumpkin vinaigrette (and pssst…it doesn’t have oil, so it’s lower in fat than many salad dressings and vinaigrettes too).

Pumpkin Vinaigrette

1/2 cup Libby’s 100% Pure Pumpkin
1/4 cup white wine balsamic vinegar
1/4 cup water
2 sundried tomatoes chopped
2 leaves basil minced
1 clove Garlic
1/4 tsp Salt
1/4 tsp thyme
1/8 tsp black pepper

1. Add all the ingredients into a blender and pulse until chunky smooth.
2. Add to your favorite salad (mine here is a romaine lettuce salad with grilled chicken, sliced portabella mushrooms and fresh mozzarrella).

If you’d like it creamier (like I do), create recipe as is. If you like it less creamy, use more water- the thickness is from the pumpkin, not mayo or eggs or oil! It’s surprisingly delicious and creamy, and has less fat, calories and cholesteral than most other dressings.

Pumpkin is a superfood, which also add extra fiber and vitamin A to our diets. It’s a great stir-in food, so in addition to being the star of some recipes, it can help enhance others, like oatmeal, smoothies, mac and cheese, and is a great substitute for eggs, butter, or salt in many recipes.
