Penelope’s Crockpot Chili Recipe

I love the crockpot. I think it’s one of the best kitchen appliances around for delicious, healthy food with minimal work/time involved. I also love chili, and here is my absolutely favorite crock pot chili recipe- serve it on a cold winter night, and your family will thank you!

Ingredients
1 1/2 pounds ground beef
2 cups tomatoes diced (or one can organic diced tomatoes)
1 cup chopped onion
1/2 cup chopped green bell pepper
1 carrot chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon coriander
1 garlic clove, minced
1 can kidney beans (about 2 cups), drained and rinsed
1/2 cup water or beef broth
salt and pepper

Instructions
Cook the ground round in a large skillet over medium heat until browned.
Add in the remaining ingredients except for beans, and mix.
Place mixture into slow cooker, add water or broth, and stir in beans.
Cook on low for 5 hours.

This chili is also yummy served in taco shells, with sour cream, cheddar cheese and lettuce toppings, or served hot with some nachos on the side for a family treat.
